We decided to use this beautiful Colombian coffee as our main espresso option in Abbey River a few months ago and we haven't looked back.
This coffee is roasted this is a little lighter to suit home filter brewing. If you're lucky enough to have an espresso machine at home, leave a comment on your order or email us and we'll roast it accordingly.
Tasting Notes: Cherry - Wine - Caramel - Cocoa - Vanilla
REGION: Cundinamarca
FARM: Finca El Imperial
VARIETY: Castillo
ALTITUDE: 1550 metres
PROCESS: Honey 96hr Lactic Fermentation*
*Coffee farmers and producers often experiment with coffee processing in order to obtain the best (and often most complex) flavours. In short, this process involves partially pulped (just the mucilage around the seed - "Honey") coffee cherries fermenting under anaerobic conditions (without oxygen) in a tank for 96 hours. Specific conditions within the tank allow for the growth of the lactobacillus culture; the kind used in dairy production that generates lactic acids. The farmer carefully monitors & controls temperature, available oxygen, sugar content & pH to get the result they're looking for. The result in the cup is usually tons of sweetness, juiciness & often winey notes.
